Madeira sponge

A firm, moist sponge, suitable for any type of design, but particularly for cakes which need to be carved or shaped.

Ingredients:  Butter (not marg.), sugar, flour, free-range eggs.  That's it!  You can also have a flavoured cake if desired, e.g. lemon sponge
Shelf life: Will keep for at least a week after delivery


Light fruit cake

A Dundee-type cake, most suitable for cakes which don't have to be carved or shaped, as the bits of fruit can get in the way.

Ingredients:  Butter (not marg.), flour, sugar, free-range eggs, almonds, dried mixed fruit & peel, alcohol
Shelf life: Will keep for at least a month after delivery if stored properly


Chocolate cake

A firm, rich, moist cake, used for any type of design.

Ingredients:  Butter (not marg.), flour, sugar, free-range eggs, dark chocolate, golden syrup, water, cocoa powder
Shelf life: Will keep for at least a week after delivery


Carrot cake

A light, moist cake, only suitable for cupcakes or 'tin-shaped' cakes (ones that don't have to be carved).

Ingredients:  Flour, sugar, sunflower oil, cream, coconut, spices, salt, carrots, free-range eggs, orange zest, dried fruit, alcohol
Shelf life: Will keep for at least a week after delivery

Marzipan
Please note that all cakes may include a marzipan layer, unless you specifically request otherwise or specify 'no nuts'. (This layer can be easily removed before eating if you prefer, but is used to help give a smooth finish under the icing).


Buttercream (if desired)
Used for filling & coating cakes

Ingredients:  Icing sugar, butter, water 


Jam

Used for filling & coating cakes either instead of, or in addition to, buttercream. 

Ingredients vary depending on flavour, but unless otherwise specified, standard strawberry or raspberry jam will be used. Please let me know if you have a preference.


Fondant icing

Used for covering cakes

Ingredients:  Sugar, glucose syrup, hydrogenated vegeatble oil, water, sorbitol syrup, vegetable glycerine, emulsifier E471, citric acid, E330, preservative E202, stabiliser E413.
Additives: Depending on colour, may also contain any or all of the following: 
E171, E133, E102, E124, E110, E122, E104, E153, E122, E120
